Sometime around 1990, Americans decided that fat was dangerous and should be removed from all foods. This gave rise to such questionable fat-free products as Snackwells cookies, Healthy Choice Ice cream and I can’t believe It’s Not Butter. The fad culminated with the advent of Olestra, a synthetic fat that could not be digested by the human body. This “modern marvel’ was said to pass harmlessly through the digestive system allowing consumers to eat all the potato chips they wanted without gaining weight. What could go wrong? The results were “explosive,” so to speak
